To take some pressure off of party days I like to make as many things as possible the day before. These Boozy Gazpacho Shots are better if made ahead and always a big hit.

Boozy Gazpacho Shots

Makes about 1 gallon, takes about 20 minutes

  • 1/2 cup (4 oz) olive oil
  • 1/4 cup (2 oz) red wine vinegar
  • 3 cloves garlic, chopped
  • 1 tablespoon sea salt
  • 1/4 teaspoon cumin
  • 1 teaspoon Chipotle Pepper Tabasco Sauce (or to taste)
  • 4 large red tomatoes, chunked
  • 3 cans (14 oz) Muir Glen Organic diced tomatoes fire roasted 
  • 1 large green pepper, chunked
  • 1 large cucumber, chunked
  • 1/2 medium sweet onion, chunked
  • 3 oz shot glasses (order here)
  • St. George Green Chile vodka
  1. In a Vitamix, puree the olive oil, vinegar, garlic, salt, cumin, Tabasco and fresh tomatoes. 
  2. Pour into a 1 gallon pitcher.
  3. Add the canned tomatoes, green pepper, cucumber and onion to Vitamix and puree.
  4. Pour into the pitcher and stir the two batches together. Add salt or pepper sauce if needed, but remember the Green Chile Vodka will bring some spiciness.
  5.  Chill. Can be made a day or two in advance.
  6. When you are ready to serve, pour 1/2 oz of vodka into each shot glass, pour gazpacho most of the way up. Stir to combine.
They are also really satisfying with mini grilled cheese sandwiches on top!
