Boozy Gazpacho Shots
To take some pressure off of party days I like to make as many things as possible the day before. These Boozy Gazpacho Shots are better if made ahead and always a big hit.
Boozy Gazpacho Shots
Makes about 1 gallon, takes about 20 minutes
- 1/2 cup (4 oz) olive oil
- 1/4 cup (2 oz) red wine vinegar
- 3 cloves garlic, chopped
- 1 tablespoon sea salt
- 1/4 teaspoon cumin
- 1 teaspoon Chipotle Pepper Tabasco Sauce (or to taste)
- 4 large red tomatoes, chunked
- 3 cans (14 oz) Muir Glen Organic diced tomatoes fire roasted
- 1 large green pepper, chunked
- 1 large cucumber, chunked
- 1/2 medium sweet onion, chunked
- 3 oz shot glasses (order here)
- St. George Green Chile vodka
- In a Vitamix, puree the olive oil, vinegar, garlic, salt, cumin, Tabasco and fresh tomatoes.
- Pour into a 1 gallon pitcher.
- Add the canned tomatoes, green pepper, cucumber and onion to Vitamix and puree.
- Pour into the pitcher and stir the two batches together. Add salt or pepper sauce if needed, but remember the Green Chile Vodka will bring some spiciness.
- Chill. Can be made a day or two in advance.
- When you are ready to serve, pour 1/2 oz of vodka into each shot glass, pour gazpacho most of the way up. Stir to combine.
